A Chef with enthusiasm

Liam's culinary journey is marked by experience in exceptional kitchens. From his ten years as a baker, crafting delightful breads and pastries, to his transition into cheffing around 2016, he has honed his skills across the hotel industry. Most recently, he served as a sous-chef in the wedding industry, with a Michelin chef, mastering the art of fine dining and truly delicious food. 

More than just a Chef

A local lad, Liam is originally from Springfield near Gretna and went to Springfield Primary school and latterly Annan academy. After completing his education, he worked as a baker for ten years in Gretna before moving into the cheffing world and opening his own restaurant in Dumfries. To gain more experience, he moved into the wedding industry and was then offered a brilliant opportunity as a Sous-chef working with a Michelin chef in the wedding trade. 

He gained invaluable experience and really enjoyed putting together fine dining wedding meals and menus. However, the team decided to venture into the lake district, opening several restaurants, but Liam is a Dumfriesshire lad and wanted to remain local. 

So, together with his wife, he now owns & runs the Wee thistle in Eastriggs; A small Bistro that offers exceptional meals that are really reasonably priced. 

If there's one thing you should know about Chef Liam, it's that his cooking is as good as his sense of humour! He brings a warmth and personality to The Wee Thistle that extends beyond the kitchen. Prepare for not only tasty meals but also, a friendly and engaging experience.
